Raw Granola “Rawnola”

These are not just the most amazing tasting guilt free granola you will ever have, but also one of the healthiest you will ever eat. This granola is packed full of essential minerals such as calcium, iron, potassium, magnesium and zinc. It also contains vitamins such as thiamine, riboflavin, niacin, folate, vitamin A and vitamin K.

This granola is raw so no cooking is involved in this recipe which is way this is one of my go to breakfast especially we I am in a rush in the morning! It takes less than 10 minutes to make, which is always a plus.

So let get started…..

Ingredients

12 – 16 Medjool Dates

1 Cup of gluten free oats

2tbsp of chia seeds

2tbsp of cocoa nibs

A good handful of pumpkin seeds

Method to follow

Start by placing the pitted medjool dates, cocoa nibs, chia seeds and oats in a food processor. Pulse for about 2 minutes or until the mixture starts to clump together.

Empty the mixture into a bowl and form the mixture into small granola pieces. Separate the Rawnola into two bowls enjoy with plant milk. For an extra bust of energy top it off with some pumpkin seeds, chia seeds, cocoa nibs, and goji berries.

This can also be enjoyed sprinkled on top of a smoothie bowl or on its own as a snack.
